Rocket

Method

Toss rocket with the lemon dressing and serve with the sausages and salsa.

Whisk lemon juice and olive oil together in a small bowl.

Season salsa with salt to taste.

Mix pineapple with chilli, sambal oelek, lime juice, and coriander in a bowl.

Add diced pineapple and cook for 5 minutes until lightly caramelised.

Melt sugar in a frying pan over medium heat until nearly caramelised.

Roast sausages in a baking tray for 25 to 30 minutes until cooked through.

Preheat the oven to 180°C.
