Method

Serve the custard immediately.

Whisk the egg yolks and caster sugar together until well blended.

Whisk the warm amaretto into the egg mixture.

Heat the milk, double cream, and vanilla pod in a heavy-based saucepan.

Pour half of the hot milk mixture into the egg mixture while whisking.

Combine the egg mixture back into the saucepan with the remaining milk.

Stir over very low heat until the custard thickens into a smooth consistency.
