Method

Preheat the grill to high.

Toast the bread on both sides until golden-brown.

Grill for 20 to 30 seconds until bubbling.

Season with pepper and allow the mixture to cool slightly.

Stir in the cheese, egg yolk, mustard, Worcestershire sauce, and cayenne until melted.

Slowly add the beer and simmer for 2 to 3 minutes until thickened.
