Method

Preheat the oven to 150°C.

Mince the meat and combine with onion, herbs, and garlic in a bowl.

Form the mixture into six balls, top with a bay leaf, and wrap in caul fat.

Place the faggots in a tray with stock and cook for one hour.

Boil the diced meat in a large pan of water, then drain and cool.
