Method

Brush the pastry border with egg and bake for 20 minutes until golden.

Place the plum quarters on the marzipan and sprinkle with muscovado sugar.

Roll out the marzipan and place it on the pastry, leaving a 3cm border.

Roll the pastry to a 0.5cm thickness on a floured surface and place on the tray.

Preheat the oven to 200°C and line a baking tray with parchment paper.

Serve slices of the hot tart with the cold orange mascarpone.

Beat the mascarpone, orange zest, orange juice, flower water, and icing sugar together.
