Method

Pour filling into the case, decorate with pastry strips, and bake for 45 to 50 minutes until set.

Pulse flour and butter in a food processor until the mixture resembles breadcrumbs.

Add egg yolk, sugar, and water, then pulse until a firm dough forms.

Knead the dough lightly on a floured surface, wrap in film, and chill for 30 minutes.

Preheat your oven to 180°C.

Roll out the pastry and line a 25cm flan tin, pricking the base with a fork.

Gently heat golden syrup in a pan until runny, then stir in breadcrumbs and lemon zest.

Mix the beaten eggs into the syrup mixture.
