Method

Mix in the flour, baking powder, melted butter, salt, and pepper.

Wring the grated potato in a clean tea towel to remove excess liquid.

Serve the boxties with two bacon rashers and a drizzle of maple syrup.

Fry spoonfuls of batter in the bacon oil for 3-4 minutes per side until golden brown.

Fry the bacon in a large pan with oil for 6-8 minutes until crisp.

Gradually beat in the 200ml of milk until the mixture forms a thick batter.

Combine the grated potato and cold mashed potato in a mixing bowl.
