Method

Place four chefs' rings onto a baking tray and layer three wonton wrappers inside each.

Pipe cream into baskets, top with raspberries, and drizzle with coulis.

Strain the coulis through a sieve and chill in the fridge.

Blend raspberries and lemon juice, adding sugar to taste for the coulis.

Transfer the Chantilly cream to a piping bag and chill.

Whisk icing sugar and lemon juice into whipped cream until stiff peaks form.

Preheat the oven to 200°C.

Remove baskets from rings and cool on a wire rack.

Weigh wrappers with baking beans and bake for 7-10 minutes until golden.
