Method

Melt 25g butter in a frying pan over medium heat, then add 30ml brandy and the muffins.

Mix mascarpone, chopped pistachios, icing sugar, and double cream in a bowl until combined.

Plate the warm cakes, top with pistachio cream, and drizzle with hot chocolate sauce.

Combine sauce ingredients in a small saucepan and melt over heat.

Warm the muffins for three minutes on each side.
