Method

Blend 50g strawberries and icing sugar in a mini-food processor until smooth.

Pour the mixture into a glass and drizzle with remaining coulis and 50g melted chocolate.

Gently fold the whipped 100ml cream, brandy, and half the coulis into the egg whites.

Whisk two egg whites in a clean bowl until stiff peaks form.

Press the strawberry mixture through a sieve into a bowl to remove pips.
