Decorate with a small sprig of rosemary before serving.

Pour 284ml of double cream into a small saucepan.

Add rosemary sprigs and infuse in the cold cream for as long as possible.

Remove the rosemary and heat the cream gently until hot but not boiling.

Add 100g of grated chocolate and stir quickly until melted.

Pour the mixture into espresso cups and refrigerate until set.
