Method

Plate the couscous, top with peppers, and finish with crumbled Stilton.

Heat olive oil in a pan and fry the peppers for 3 minutes.

Place the couscous in a bowl and cover with boiling water to a depth of 1cm above the grains.

Add the herbs and season with salt and pepper to taste.

Fluff the grains with a fork and stir in the warmed cream.

Cover with cling film and leave for three minutes until the liquid is absorbed.
