Method

Place potatoes, tomatoes, peppers, olives, caper berries, green beans, and rapeseed oil in a warm pan.

Lightly color the vegetables over heat, then set aside.

Fry scallops in a non-stick pan until golden-brown on both sides, adding butter at the end.

Mix chives with yoghurt and season to create the dressing.

Arrange salad, eggs, and vegetables on a plate, top with scallops, and drizzle with dressing.

Cover the plate with a glass dome and fill with smoke for a few minutes using a smoke gun.

Serve the dish by removing the dome in front of the guest.
