Method

Bake the tarts for 20 minutes until golden.

Sauté onions, tomatoes, garlic, and thyme in butter and oil for 25 minutes until caramelized.

Stir in balsamic vinegar and sugar and cook for two minutes.

Preheat the oven to 200°C.

Score a shallow 1cm border around the edge of the puff pastry circles.

Spread the onion mixture onto the pastry centers while avoiding the borders.

Top with goats' cheese and brush the pastry edges with beaten egg.
