Method

Sear lamb cutlets, sausages, and tomato halves in 15ml olive oil.

Serve the toad-in-the-hole with the prepared onion gravy.

Preheat the oven to 250°C.

Reduce the red wine by half and simmer with chicken stock for 15 minutes.

Cook the red onions and thyme in oil for 20 minutes for the gravy.

Pour batter over onions and bacon, arrange meat and vegetables on top, and bake for 15-20 minutes.

Whisk batter ingredients together until smooth and rest for one hour.

Sauté the sliced onion and chopped bacon in a separate pan with remaining oil.

Briefly cook the mushrooms in the same pan.
