Method

Whisk egg yolks with 100g sugar until pale and thick.

Fold egg whites into the chilled mixture and serve with nutmeg.

Whisk defrosted egg whites with 50g sugar until soft peaks form.

Freeze egg whites in a container until ready to serve.

Pour into bottles and refrigerate for up to two weeks.

Stir in the milk, double cream, spirits, and optional nutmeg.
