Method

Place the rarebit onto plates to serve.

Spread the mixture onto toast and grill until golden brown.

Preheat the grill to a medium setting.

Whisk in egg yolks, mustard, Worcestershire sauce, ale, and 120g of cheese until smooth.

Whisk the warm milk into the flour mixture and bring to a boil.

Melt 30g of butter in a separate pan and stir in 30g of flour for two minutes.

Boil 290ml of milk in a pan.
