Method

Sandwich two cooled meringues together using a teaspoon of the filling.

Heat double cream in a saucepan until boiling, then stir in white chocolate and raspberries.

Place teaspoonfuls of the mixture onto trays and bake for 2 hours.

Fold in the icing sugar, rosewater, and food colouring.

Whisk in caster sugar gradually until the mixture is thick and glossy.

Whisk egg whites in a clean glass bowl until soft peaks form.

Preheat your oven to 120°C and line two baking trays with baking paper.
