Method

Gently heat the brandy and add the cranberries to soak.

Melt the chocolate and butter together until smooth and set aside to cool.

Whisk the eggs and sugar together in a large bowl until pale and fluffy.

Whisk the chocolate mixture into the eggs then fold in the remaining dry ingredients and brandy.

Preheat the oven to 180°C and line a 30x20cm tin with baking parchment.

Pour the batter into the tin and bake for 25-30 minutes until firm.

Cool the brownies in the tin for 10 minutes then transfer to a wire rack.

Cut the cooled brownie into squares and dust with icing sugar.
