Method

Dust with icing sugar and drizzle with the remaining 25g of melted dark chocolate.

Spoon the mixture into the ramekins and bake on a tray for 6-8 minutes until risen.

Gently fold the melted chocolate and then the roux into the egg whites.

Preheat the oven to 180°C and grease the insides of two ramekin dishes.

Whisk the egg whites in a bowl until soft peaks form.

Melt 55g of dark chocolate in a bowl over a pan of simmering water and let cool slightly.

Melt the butter in a small pan and stir in the flour to make a roux.
