Method

Decorate with remaining berries, mint, and caramel curls before serving.

Caramelise remaining sugar in a pan and create spun sugar curls with a spoon.

Dust with icing sugar and score a diamond pattern using a heated metal skewer.

Warm the ring edges with a hot cloth and lift it to remove.

Cut the flan case using a 20-25cm ring and slice horizontally into two layers.

Fill the centre with whipped cream, top with the second sponge layer, and press down.

Line the ring perimeter with halved strawberries, cut-side facing outward.

Whip double cream with vanilla, remaining liqueur, and 60g sugar to semi-firm peaks.

Place the ring on a plate, insert one sponge layer, and sprinkle with half the liqueur.
