Method

Boil the mixture for eight minutes.

Combine the garlic, chopped spring onions, prawn shells, 75ml white wine, tomato purée, ketchup, and 100ml water in a saucepan.

Portion the 300g of cooked spaghetti and top with the sauce.

Stir in the chopped tomato.

Cook over medium heat for two minutes.

Return the stock to the pan and add the 125ml cream and the remaining spring onion.

Strain the liquid into a bowl and discard the solids.
