Method

Remove the chicken and let it rest for 15 minutes before serving.

Rub the paste over the chicken and marinate for three hours.

Pour 500ml of ale over the chicken and leave to marinate overnight.

Mix 60ml of ale with malt extract, chilli powder, mustard, garlic, paprika, and sugar to make a paste.

Preheat the barbecue or oven to 190°C.

Rinse the marinade from the chicken and pat it dry.

Smear butter under the chicken skin and over the thighs, then season with salt.

Pour 300ml of ale into the beer can and place the chicken upright onto the can.

Roast the chicken for 40 to 45 minutes while basting occasionally.
